So basically, i was wondering if it's a good idea to primer a piece, then spray it, then clear coat it, then add water slides and then clear coat it again. Would that be effective or would it somehow damage the piece?

Sounds like the standard process to me.

Primer
Paint and detail paint
gloss coat for decals
sealer coat to protect the decals
weathering
possible other sealer coat after that

This is the correct order, you just need to make sure that your clear coat is compatible with the color coat you use. Enamel and Lacquer clear coats, if applied to heavily can sometimes melt acrylic paint jobs.

As mentioned make sure your clear coats are compatible with the underlying paints etc and leave clear parts till last as the clear can craze the plastic worst case, or at least change the effect.
