It's a Japanese abbreviation for "soft vinyl," used by toy hobbyists outside of Japan as well. Much like Gunpla is used internationally for "Gundam plastic models." There is a Reddit group for sofubi enthusiasts, but the crowd there is more focused on custom toy enthusiasts rather than model builders.
